We are still in summer but the air finally feels cooler and I am excited to be back in the kitchen. I love the taste of rice + stir fried vegetables + greens and this is one of my easy favorites. When I cook rice, I almost always mix different types together. Today I combined white basmati with wild + brown basmati. After first rinsing the rice, I then slowly cook it in ratio 2:1 water to rice but I always add a little pink salt and 1 tbsp organic olive oil. (or when making rice for curry, I cook the rice in light coconut milk or holy basil tea) The end result is so much richer this way - do you have a favorite way to make your rice?
Normally I do not really like the taste of tofu but I really enjoy this one. Out of the package, I rinse the tofu and press out any extra liquid and then cut it into very small cubes and set that aside. Meanwhile in a pan, heat sesame oil, freshly pressed ginger (and garlic if you like it) and 1 tbsp of Coconut Secret Aminos and a little tamari, warmly slowly. I then added the tofu and let it continue to cook very slowly with a cover. (I normally like to allow the tofu to marinate for a few hours first if possible, but slow cooking helps) I decided to keep things easy today and for vegetables I washed and sliced some lovely organic swiss carrots and leeks. I moved the tofu mixture to the side and allowed the vegetable to cook together in the other half of the pan until softened.
While the tofu + veg were cooking, in the gaggenau, I slowly roasted some cashews mixed with coconut aminos. The beauty of Coconut Secret Coconut Aminos is that it gives the flavor of something sweet, but the sugar content is very low. It is a wonderful product - similar to a terriyaki sauce but so much lighter.
Rice underneath, tofu/stir fried vegetables on top, mixed with some fresh greens, shredded cabbage and cashews.. and of course kombucha. I drink half of a kombucha every day (for the last 12 years) and right now, NYCHA quitte kombucha (quince & pear) is my favorite ~ and they will deliver through swiss post... right to your home!
